When Nicola Pedote began his career as a pastry chef 50 years ago, he never imagined that his family's history would be perfumed by vanilla and the taste of flour.
In 2001, the Pedote and Fanizzi families decided to collect the sweet heritage of Papà Nicola by blending three fundamental ingredients: the characteristic products of the region, artisanal techniques from the past, and the innovation of modern technology.

Respect for Apulian gastronomic traditions has always been at the heart of our products: the biscuits and taralli produced by Dolciaria Ambrosiana are still prepared according to our grandmothers' original recipes, with special attention to the selection of raw materials.
The use of technologically advanced machines and the desire to offer products that everyone can enjoy helps us to be the most competitive in terms of price-quality ratio.
Our cookies were born from the meeting between imagination and the variety of ingredients.
Inspired by the tradition of Italian pastries—dry pastries filled with jam, decorated with chocolate or powdered sugar—Dolciaria Ambrosiana is a wonderful bakery where cookies are not just made, but created. We want to give everyone the opportunity to put a dessert on the table at any time, as if it were always a festive day.
The cookies are prepared with selected ingredients. Special attention is paid to fairtrade and eco-sustainable raw materials, such as UTZ cocoa and RSPO margarine.
From centuries-old processing methods and typical Apulian gastronomic products come 'taralli' and savory snacks, all freshly baked, packaged, and an excellent substitute for bread.
Taralli are made based on traditional recipes and the memories of grandmothers who still knead them by hand to create crumbly rings that not only look good but also smell and taste delicious. Our Taralli are prepared with 99% Apulian ingredients and are the best way Dolciaria Ambrosiana has to celebrate Puglia and export its taste.
